I had the pleasure of attending Janes Red Chile Fiesta class last night. What a great class!!! We made many different dishes that used several kinds of chiles. Jane was so knowledgeable and fun! The hands on learning as well as tasting all the dishes was awesome! I met some wonderful fellow students and I look forward to taking many more classes.

I had a wonderful time learning how to make red chile beef enchiladas along with corn tortillas! The other participants in the class were fun to work with, and Jane was extremely knowledgable about the history of New Mexican food. She knows her stuff, and she is an amazing chef, down to the presentation details. I cant wait for the next class!!

My daughter and I just took the weekend Tex Mex class and had a great time. We learned alot and ate wonderful food. Jane is a great teacher!

My wife Melinda took one of Janes weekend cooking classes and I was invited to drop by to observe the class and partake of their labors with lunch. Everyone in the class seemed very impressed with how it was conducted. I was able to sample everything that they had created from scratch. I have been enjoying Southwestern food for 65 years (being a New Mexico native) and this was the very best example of this delicious style of cooking I have ever tasted. For the first time in my life I was unable to pick out a favorite dish. When everything on your plate is unbelievably delicious...then you are enjoying the very best.

So much fun learning history, science and tradition of preparing New Mexican cuisine from Jane! South Western cooking in her comfy kitchen, her great teaching skill and enjoying our menus at her table is wonderful. Excellent times! Thank you, Jane !

Learned a lot (Jane is a wealth of information about culinary science) and got some great recipes along with the experience in making them. Would recommend the class to anyone interested in Southwest Cuisine.
